Bondi Bowls to Open Food Truck in Holland Area

This summer a fresh new flavor is coming to the local food scene. Bondi Bowls, an açaí bowl food truck, will be featured at various events and locations throughout the Holland and Zeeland area, serving up vibrant and refreshing bowls for the next few months.

HOLLAND, Mich.—This summer a fresh new flavor is coming to the local food scene. Bondi Bowls, an açaí bowl food truck, will be featured at various events and locations throughout the Holland and Zeeland area, serving up vibrant and refreshing bowls for the next few months. 

If you visited this year’s Tulip Time, you might have already seen the food truck parked over by Cento Anni and Warehouse 6. And if you haven’t been able to try it out, rest assured as it won’t disappear from the area after the festival. Bondi Bowls actually has locations in Huntington Beach, Oklahoma, Oregon, Tennessee, and Texas. And one of its most recent locations is taking place here, in our very own city of Holland. 

So what is Bondi Bowls all about? It’s a multitude of things, but what makes it truly special is the founder's foundation in faith. Bailey Wilson, founder and CEO, shared the reason that sparked the business’ inception. 

How It Started 

Bailey Wilson, a young entrepreneur, started Bondi Bowls in her early 20s. She spent her childhood and young adult life in Edmond, Oklahoma, and after graduation decided to carry her academic endeavors to California. Then, she took another leap, moving across the globe to Bondi Beach, Australia.

After two years, having settled into her new life in the down under, she received a call from her father back in the United States. He revealed a medical diagnosis: a tumor in his bladder. The next morning he was expected to undergo an emergency surgery to remove it. Bailey rushed home to be present with her family. After touching down in her homeland, the news was shared on her father’s tumor. It was non-invasive cancer, with assurance of a normal life expectancy. 

Being back in the United States at the time, Bailey was unable to return to Australia due to the pandemic restrictions that hindered international travel. “Now I had to trust that the Lord brought me home after six years, during a global pandemic, for a reason,” Bailey writes. 

With her father’s health as a priority, Bailey wanted to do everything she could to ensure he remained as stable and strong as possible through the treatment process. From the experiences she brought back from Australia, she thought of no better fuel than açaí bowls. 

From Kitchen Counter to Truck Window

As Bailey continued to serve her father fresh açaí, her mother suggested she expand her fruit creations to function for another purpose: serving the community. This idea turned into a food truck that would serve those in her hometown. She acquired the truck, created the brand, settled on a name that paid homage to her beloved time spent in the land down under, and started the process of serving others. 

The venture eventually grew into a multitude of locations, from one truck to multiple trucks across the nation, a few storefront locations, and even kiosks located at various universities. These locations range from Huntington Beach to Oklahoma, Oregon, Tennessee, and Texas.

So where’s the next stop? Right here in Holland, actually. 

“We can’t wait to serve the community of Holland and Zeeland. Our owners are locals. And getting to serve the community that we love is the best reward and blessing! 'Can’t wait to partner with schools, churches, businesses, and events!” Bailey said. 

Meet Emily, Owner of the Holland/Zeeland Truck

If you were one of many who visited the Bondi Bowls truck parked at Tulip Time, you might have met its owner, Emily Brace. She’s a Holland local who married her high school sweetheart and has two amazing young children.

While in college, Emily worked at what once was 8th Street Grille and developed a love for the small-town food scene due to its strong community aspect. “I always enjoyed the food service industry, mainly because I got to meet many cool people from both around here and far away!” 

And then, a few years later she found herself in the position of owning a food truck herself. “We half-jokingly talked about opening an açaí bowl place here in Holland, but I never truly dreamed it would become a reality for us,” Emily explained. 

Her friend, who owned the Kansas City Bondi Bowls truck, decided to pursue his second love for his business in pickleball, allowing the truck to go up for sale. “We prayed about it and felt like we were supposed to buy it from him,” Emily said. “And one thing led to another. Doors kept opening, and in February we drove down to Kansas City and drove the food truck all the way back to West Michigan!”

This summer will be Bondi Bowls’ first time in Holland. The last few months have been busy for Emily as she prepares the truck for the season ahead, working through the technicalities and raising her little ones at the same time. “It has been very rewarding, and I love that I can set this example for my kids of working really hard for the things you are passionate about,” Emily described.

The Holland Bondi Bowls truck made its official debut at Tulip Time, parked over by Warehouse 6 near E Sixth Street downtown. “We’ve met people from Holland and many from out of state here for the festival, and just getting to know people is my favorite part. Bailey, our founder, was up here for the first weekend and I had a blast telling her all about the traditions, showing her Dutch costumes, Dutch dance, and of course, the wooden shoes!” 


What They Offer

The Bondi Bowls menu is based on açaí, a superfruit derived from the Amazon. These berries are rich in various things like antioxidants, fiber, and fats. They also contain various minerals such as calcium and potassium, as well as vitamins A, C, and E. They’re heart-healthy and are believed to help support brain function. 

Their current menu features fresh smoothie bowls, including an açaí base and a pitaya (dragon fruit) base, power balls made with our homemade granola and peanut butter, shaved ice, and our lemonades,” said Emily, owner of the Holland/Zeeland truck. “It’s been so fun to get such great feedback on our food and beverages!” 

Pssst… it’s been said the lemonade is sensational. 

Bondi Bowls isn’t just committed to fresh food; it's also rooted in faith. It’s more than just a spread of fruit, butters, and syrups. It’s a commitment to serving others and interacting with the broader community. The mission: “Encouraging God-honoring conversations while building community around healthy food.” 

The business functions on the message from Proverbs 16:3, "Commit to the Lord whatever you do, and He will establish your plans.” 

Where Can You Find the Truck Next? 

Though the official summer schedule is still in the works, expect to check the website online for the most recent and updated location postings. Bondi Bowls is set to serve those at Worship on the Waterfront at Beechwood Church, a summer long event that goes from June 28 to September 5. The event will feature various worship artists from Colton Dixon, Unspoken, Stars Go Dim, and Austin French. 

You might even be able to catch the truck at a regular mid-week spot as well. So keep an eye out for the next location by following the Instagram page.
